I share this recipe with everyone who is trying to lose weight or wants a quick and easy soup for the winter or fall. Some people say it’s a weight loss soup, and it very well could be. I use it for a healthy lunch or dinner in the winter. It’s low-carb and full of nutrients. It’s packed with veggies. You are more than welcome to make it your own too. If you want to add or subtract anything feel free.
Also you should know that I am terrible at exact measurements. I measure with my heart and you should too!
I will tell you what I use in mine, you can use this too or make it your own.
- 64oz of chicken broth (you can use veggie if you prefer)
- Salt & Pepper to taste
- Italian seasoning (you’re going to want to be generous)
- Minced garlic
- 1/2 head of Cabbage
- 2 tbs butter
- half of a chopped yellow onion
- 3 stalks celery
- 1 cup chopped carrots
- 1 yellow squash
- 1 zucchini
- can of corn
- can of diced tomatoes
- can of kidney beans
